Cozze alla Buzara (Mussels in Buzara Sauce)

·        2kg mussels – I bought mine at Costco for $9.99
·        8 tablespoons extra-virgin olive oil or more
·        6 plump garlic cloves
·        1 cup finely chopped green onions
·        2 tablespoons of tomato paste
·        2.5 cups of white wine
·        3 cups of water
·        Grounded black pepper
·        Breadcrumbs
·        2 tablespoons parsley

A yummy Croatian dish!

Pour 4 tablespoons of the olive oil into a LARGE sauté pan
Scatter in the garlic and cook until sizzling, then add the green onions
Once everything is sizzling, mix in a ½ teaspoon of salt and ½ cup of white wine
Stir frequently until the wine has evaporated, then mix in the tomato paste and caramelize
Pour in the remaining wine and bring to a boil
Once boiling, add the water and another ½ teaspoon of salt
Now you add the breadcrumbs, the amount depends on how thick you want the sauce
When the sauce reaches the desired thickness, drizzle on the remaining tablespoons of olive oil and sprinkle with the parsley

(I don’t start the mussels until the sauce is ready)
Clean and steam mussels as per instructions on package (fairly simple)
They take about 7-10min to cook à in a large pan with a tablespoon or two of water/wine/beer à whichever you prefer!
Once they are open they are cooked!

As the mussles open, remove them from the pan and put them into the sauté pan with the sauce.
